Dolci al Limone is my creation based on a classic Italian treat Pesche Dolci, a cookie created sometime in the 1800's and still made today. In my lemon version two lemon cookies are joined together then filled with lemon pastry cream infused with fresh lemon juice and lemon zest. After assembled they are dunked in limoncello and rolled in superfine sugar. After assembling and decorating a 24hr rest period is required. This allows them to absorb the filling and the liqueur, and acquire the moist, dense texture of summer-ripe fruit. Like most authentic Italian cookies they are not overly sweet but just sweet enough. You, your guests or the person you are gifting them to will instantly fall in love with them. Trust me they taste as good as they look.
